Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Mushrooms

Ingredients

Directions

Prepare the mushrooms

  1. Remove the gills from the mushrooms and mince them finely.

  2. Place the minced mushrooms in a cloth and press them well.

Make the gravy

  1. Melt the butter in a stewpan over medium heat.

  2. Squeeze the juice of the lemon into the melted butter and add the minced mushrooms.

  3. Cook until the butter is melted, then add the strong gravy and thick white sauce.

  4. Reduce the mixture until it thickens, then add pepper to taste and serve.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Butter and sauce barely smell alike, yet cooks put them together in 15,338 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mushrooms
Provide the main body and earthy flavor of the gravy.
Butter
Adds richness and carries the mushroom flavor through the sauce.
Strong gravy
Supplies savory depth and liquid for the sauce.
Thick white sauce
Adds body and creaminess, helping the gravy thicken and coat.

The step that matters

Reduce the mixture until it thickens. Reducing evaporates water and concentrates flavor, while the sauces thicken as they simmer. Stopping too early leaves the gravy thin and diluted.

Swap the lemon

How well each one fits the dish's main ingredients (mushroom, butter, sauce, pepper):

  1. Lemonthe original
  2. Plumfits about as well
  3. Mangofits about as well
  4. Avocadofits less well

Fit is the average pairing score against mushroom, butter, sauce, pepper. Candidates are from the same food group and used in at least 100 recipes.
