What each ingredient does

Saltpetre
Helps cure the tongue and gives it a pink colour and cured flavour.
Soy sauce
Adds savoury depth and salty umami to the gravy.
Mushroom ketchup
Adds concentrated savoury, umami flavour to the gravy.
Truffles
Adds a strong aroma and earthy flavour to the finished dish.
Morels
Add earthy, meaty texture and flavour when stewed in the gravy.

The step that matters

Turning the tongue during the week-long cure. Curing salts must reach every part of the meat evenly. Turning the tongue daily redistributes the brine and cure, so the salt penetrates uniformly and no area stays under-cured or spoils.
