Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ready-boiled wheat
Forms the bulk of the dish and gives it its grainy, porridge-like body.
New milk
Cooks with the wheat to form a soft, creamy liquid that thickens as it heats.
Egg yolks
Thicken the mixture when stirred over heat and add richness.
Currants
Add small pockets of chewy sweetness and fruit flavour throughout.

The step that matters

Stirring the egg yolks into the hot wheat. Egg yolks set when heated, but if the mixture gets too hot too fast or is not stirred constantly, the yolks can scramble into lumps instead of thickening the dish evenly.

Swap the currant
