What each ingredient does

Lemon rinds
Their oils release fragrant lemon aroma into the rum during steeping.
Lemon juice
Adds acidity that balances the sweetness and causes the milk to curdle.
Loaf sugar
Provides sweetness and helps balance the sharp acidity of the lemon.
Rum
Carries the lemon and nutmeg flavours and gives the punch its alcoholic body.
Milk
Curdles with the acid, trapping cloudy particles so straining leaves a clear liquid.
Nutmeg
Adds warm, aromatic spice notes to the finished punch.

The step that matters

Pouring in the boiling hot milk. Boiling milk poured into the acidic punch curdles its proteins, which bind cloudy particles. Stirring well and letting it stand lets the curds settle, so the straining through a jelly bag can produce a clear liquid.
