Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Penny roll
Toasted and simmered crumb releases starch and flavour that thicken the water into a jelly.
Spring water
Serves as the liquid that the bread softens in and gels around.
Sugar
Adds sweetness to balance the bland bread flavour.
Lemon juice
Adds acidity that brightens the flavour of the jelly.

The step that matters

Simmer gently until the liquid becomes a jelly. Gentle heat lets the bread's starch swell and gradually thicken the liquid. Boiling hard can break up the mixture and leave it cloudy, so the jelly may not set properly.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, wine):

  1. Vanillafits better
  2. Applefits better
  3. Grapefits better
  4. Lemonthe original

Fit is the average pairing score against sugar, wine. Candidates are from the same food group and used in at least 100 recipes.
