Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calves' feet
Release gelatin into the gravy, giving it body and a jelly-like texture when cooled.
Beef steak
Adds meaty flavour and richness to the stewed broth.
Cream
Adds fat and smoothness, softening the sharpness of the spices.
Shallot
Contributes a mild savoury aroma to the stewing liquid.

The step that matters

Warm the mixture without boiling. Boiling a cream-based sauce can cause it to separate and turn grainy, and it can make the gelatin-rich gravy lose its smooth texture. Gentle heat keeps it silky.

Swap the mace

How well each one fits the dish's main ingredients (pepper, ginger, shallot, beef, saffron, cream):

  1. Turmericfits better
  2. Cardamomfits better
  3. Tarragonfits better

Fit is the average pairing score against pepper, ginger, shallot, beef, saffron, cream. Candidates are from the same food group and used in at least 100 recipes.
