Perigord Pie

Ingredients

Directions

  1. Make a forcemeat with green truffles, herbs, liver, bacon, crumbs, fowl flesh, pepper, and salt.

  2. Lard the breasts of pheasants, partridges, woodcocks, or other birds with bacon.

  3. Cut the legs and wings from the backs and divide the backs.

  4. Season all parts with white pepper, Jamaica pepper, mace, and salt.

  5. Prepare a thick raised crust and line it with slices of bacon.

  6. Cover the bacon with stuffing and arrange the game parts and whole truffles on top.

  7. Add more stuffing among and over the game, ensuring not to overcrowd.

  8. Lay slices of fat bacon over the top and cover with a common crust.

  9. Bake slowly according to the size of the pie until fully cooked.
