Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, combine the chopped cold veal, fat, apple, candied orange and lemon peel, fresh currants, wine, cloves, brandy, and sugar. Mix well until all ingredients are combined.

Bake

  1. Fill pastry shells with the mixture.

  2. Bake in the preheated oven until golden brown.

What each ingredient does

Cold veal
Provides the meat base, and its fat adds moisture and richness to the filling.
Apple
Adds moisture and a mild sweetness that balances the spices and meat.
Candied orange and lemon peel
Adds concentrated citrus sweetness and aroma to the filling.
Fresh currants
Add tart, fruity sweetness and chewy texture to the filling.
Sugar
Adds sweetness and helps the filling brown in the oven.
