Why it works: Sugar and cream are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 43,450 recipes. Both carry 2,3-butanedione, which smells butter, sweet. The science ↓
Rhubarb Tart,— Another Way
Ingredients
Directions
Prepare the rhubarb
Remove the leaves from the rhubarb stalks and peel off the thin skin.
Cut the rhubarb into pieces about 1 inch long.
Sprinkle a little fine sugar into the basin as you cut the rhubarb.
Make the syrup and cook the rhubarb
In a saucepan, boil 1 pound of sugar in ½ pint of water to create a thin syrup.
Skim the syrup.
Add the rhubarb to the syrup and simmer gently, shaking the pan often.
Cook until the rhubarb turns green, then remove from heat and let it cool.
Assemble and bake
Place the cooled rhubarb in a tart dish with just enough syrup to keep it moist.
Cover with a light crust and bake until the crust is golden.
Quarter the crust and fill the dish with custard or cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Rhubarb
- Forms the tart's main filling and its tart flavour.
- Common lump sugar
- Sweetens the rhubarb and, dissolved in water, forms the syrup that keeps it moist.
- Light crust
- Encloses the fruit and browns in the oven to form the topping.
- Custard or cream
- Adds richness and a soft, creamy texture to the filled tart.
The step that matters
Simmering the rhubarb in syrup. Simmer gently and shake the pan so the pieces cook evenly and keep their shape. Rough boiling breaks the stalks into mush, and overcooking leaves the fruit soft and watery in the finished tart.
Swap the rhubarb
How well each one fits the dish's main ingredients (sugar, cream):
- Nutmegfits better
- Cinnamonfits about as well
- Rhubarbthe original
- Gingerfits less well
Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
