Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the mixture and set into a firm, sliceable pudding when boiled.
Cream
Provides richness and moisture, giving the pudding a soft, tender body.
Blanched almonds
Add body and a nutty flavour, thickening the mixture slightly.
Fine flour
Helps thicken the mixture so it holds its shape in the cloth.

The step that matters

Tying the cloth securely. If the cloth is loose, water enters and soaks the pudding, making it watery and heavy. A wet, floured cloth also keeps the pudding from sticking, so it can be turned out whole.

Swap the mace

How well each one fits the dish's main ingredients (cream, clove, nutmeg, egg, flour, almond, orange):

  1. Cinnamonfits better
  2. Cardamomfits better
  3. Allspicefits better
  4. Macethe original

Fit is the average pairing score against cream, clove, nutmeg, egg, flour, almond, orange. Candidates are from the same food group and used in at least 100 recipes.
