What each ingredient does

Fine sole
Forms the main body of the dish and carries the forcemeat and larding inside.
Bread crumbs
Bind the forcemeat and help it hold together as it cooks.
Raw egg
Binds the forcemeat so it sets firm when heated.
Hard-boiled egg yolk
Adds richness and a smooth, soft texture to the forcemeat.
Anchovy
Adds a salty, savoury depth to the forcemeat.
Weak meat or fish gravy
Supplies moisture so the fish does not dry out while baking.

The step that matters

Keep the fish hot while warming the gravy. Fish is delicate and overcooks quickly, so it should be held warm rather than reheated hard. Gently warming the gravy and sauce keeps the fillet moist and prevents the sauce from breaking or turning greasy.

Swap the celery

How well each one fits the dish's main ingredients (truffle, meat, fish, bread, egg, anchovy, parsley):

  1. Capersfits better
  2. Thymefits better
  3. Nutmegfits about as well
  4. Celerythe original

Fit is the average pairing score against truffle, meat, fish, bread, egg, anchovy, parsley. Candidates are from the same food group and used in at least 100 recipes.
