A Rich Gravy

Ingredients

Directions

  1. Fry the sliced beef and onions in a pan until the onions are light pale brown, avoiding any blackening.

  2. Transfer the browned mixture to a stewpan and pour boiling water over it.

  3. Bring to a boil and pour over the meat.

  4. Add a bunch of parsley, thyme, savory, a small bit of knotted marjoram, tarragon, mace, allspice berries, whole black peppers, cloves, and a bit of ham or bacon.

  5. Simmer until all the juices from the meat are extracted, skimming frequently.

What each ingredient does

Beef
Provides the meat and juices that flavour the gravy as it simmers.
Onions
Browning them adds sweetness and savoury depth to the gravy.
Ham or bacon
Adds salty, smoky flavour to the simmering liquid.

The step that matters

Frying the beef and onions. Onions should turn light pale brown, not black. Browning builds savoury flavour, but burnt onions turn bitter and can spoil the whole gravy.
