Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

To Pickle Lemons

Ingredients

Directions

  1. Rub the lemon rinds with flannel and slit them down halfway in four quarters without cutting into the pulp.

  2. Fill the slits with coarse sea salt and set the lemons upright in a pan until the salt melts.

  3. Turn the lemons every day in the liquid they produce until they are tender.

  4. Make a pickle by combining vinegar with the brine, black pepper, ginger, and mustard seed; boil, skim, and let it cool.

  5. Pour the cooled pickle over the lemons.
