To Pickle Radish-pods

Ingredients

Directions

  1. Gather young radish-pods and soak them in salt and water overnight.

  2. Boil the salt and water, then pour it over the pods in jars, covering them tightly.

  3. Once the brine is cold, boil it again and pour it hot over the pods, repeating until they turn green.

  4. Drain the pods in a sieve.

  5. Make a pickle with white-wine vinegar, mace, ginger, long pepper, and horse-radish.

  6. Pour the boiling pickle over the pods, and when nearly cold, boil it again and pour it over them.

  7. Once cold, seal the jars.
