Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Elderberries
Provide the main fruity flavor and deep color of the ketchup.
Anchovies
Dissolve into the liquid to add savory depth and umami.
Vinegar
Extracts flavor from the berries and acts as the preserving liquid.
Shallots
Add mild aromatic onion flavor to the boiled liquid.

The step that matters

Dissolving the anchovies. Anchovies must be stirred until fully dissolved into the hot liquid; undissolved pieces leave gritty texture and uneven seasoning.

Swap the mace

How well each one fits the dish's main ingredients (vinegar, clove, shallot):

  1. Tarragonfits better
  2. Allspicefits better
  3. Capersfits better
  4. Macethe original

Fit is the average pairing score against vinegar, clove, shallot. Candidates are from the same food group and used in at least 100 recipes.
