What each ingredient does

Anchovies
Dissolve into the liquid to give the sauce a deep, savoury saltiness.
Walnut ketchup
Adds dark, concentrated savoury flavour as the base of the sauce.
Port wine
Provides sweetness and body to the liquid base of the sauce.
Lemon
Adds acidity that brightens the rich, savoury flavours.
Horseradish
Contributes sharp, pungent heat that mellows during gentle boiling.

The step that matters

Boil gently until the rawness is gone. Gentle boiling cooks off the raw, harsh edge of the alcohol and aromatics and blends the flavours. Boiling too hard can evaporate too much liquid and make the sauce overly concentrated.
