What each ingredient does

Mushrooms
Release their liquid under salt, forming the base of the ketchup.
Coarse sea salt
Draws liquid out of the mushrooms and helps preserve the mixture.
Shallots
Add savory depth and aromatic flavor to the liquid as it simmers.
Garlic
Adds pungent aroma and savory depth to the simmered liquid.

The step that matters

Boiling slowly and skimming foam. Gentle simmering extracts flavor without scorching, and skimming removes foam from proteins and impurities so the ketchup stays clear and clean-tasting for long storage.
