Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Egg yolks
- Thicken the cream as they set with gentle heat, giving a smooth, custard-like body.
- Brandy
- Adds its strong aromatic flavour and alcohol to the cream.
- Almonds
- Provide the nutty, almond flavour that infuses the milk.
- Cream
- Adds richness and fat, giving a smooth, velvety texture.
The step that matters
Heat gently without boiling. Egg yolks thicken through gentle heat; if the mixture boils, the proteins can curdle and the cream turns grainy instead of smooth.
