Ingredients

Directions

The book gives no oven temperature. The 400°F in the steps was added when the recipe was transcribed, as a starting point.

Make the dough

  1. Mix the flour, butter, sugar, and currants in a large bowl.

  2. Add the eggs, orange-flower water, rose-water, sweet wine, and brandy to form a stiff paste.

Bake

  1. Drop spoonfuls of the mixture onto a floured tin plate.

  2. Bake in a hot oven (400°F / 200°C) for a very short time.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Provides the structure that holds the cakes together as they bake.
Butter
Adds fat for tenderness and richness in the crumb.
Sugar
Sweetens the cakes and helps them brown in the oven.
Eggs
Bind the mixture and add moisture and structure to the paste.
Currants
Add fruit sweetness and chewy texture throughout the cakes.

The step that matters

Baking for a very short time. Drop cakes are small and thin, so they can go from golden to overbaked quickly. Watching closely keeps them moist and prevents dry, hard edges.

Swap the orange

How well each one fits the dish's main ingredients (flour, butter, sugar, currant, egg, rose, wine):

  1. Raisinfits better
  2. Vanillafits better
  3. Raspberryfits better
