Why it works: Lemon and orange match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 10,634 recipes. Both carry 3-hexenal, which smells apple, fruity. The science ↓
Excellent Cowslip Wine
Ingredients
Directions
Make the liquor
Boil 1 gallon of water with 3 pounds of sugar for 30 minutes, skimming off the scum.
When cool, add a crust of toasted bread dipped in thick yeast and let it ferment for 36 hours.
Infuse and ferment
Add the peels of 2 lemons, the rind of 1 lemon, the rind of 1 Seville orange, and 1 gallon of cowslip-pips to the mixture.
Pour the cooled liquor over the ingredients and stir daily for a week.
After a week, add 1 bottle of brandy for every 5 gallons.
Seal the cask tightly and let it stand for 6 weeks before bottling.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Sugar
- Feeds the yeast during fermentation and provides the sweetness and alcohol in the finished wine.
- Thick yeast
- Converts the sugars into alcohol and carbon dioxide, starting the fermentation.
- Cowslip-pips
- Supply the main flavour of the wine as they steep in the liquor.
- Brandy
- Added after fermentation to raise the alcohol content and help preserve the wine.
The step that matters
Seal the cask tightly and let it stand for 6 weeks before bottling. A tight seal keeps air out so the wine does not oxidise or sour, and the rest period lets fermentation finish and the wine clear before bottling.
