What each ingredient does

Carolina rice
Releases starch as it cooks, thickening the soup and giving it body.
Good stock
Forms the liquid base that carries the flavour of the whole soup.
Veal gravy
Adds savoury depth and richness to the broth.

The step that matters

Simmering over low heat for three hours. A gentle, low simmer lets the rice break down slowly and release its starch evenly, thickening the soup without scorching the bottom of the pot or turning the grains to mush too quickly.

Swap the allspice

The recipe marks allspice as optional. How well each one fits the dish's main ingredients (rice, veal):

  1. Turmericfits better
  2. Celeryfits better
  3. Parsleyfits better
  4. Allspicethe original

Fit is the average pairing score against rice, veal. Candidates are from the same food group and used in at least 100 recipes.
