  3. Add white wine, green onions, mushrooms, shallots, and seasoning.

  4. Optionally, add lean bacon for flavor.

Stew and serve

  1. Seal the edges of the pan with a strong paste.

  2. Let the meat stew in a 350°F (175°C) oven for 5 to 6 hours.

What each ingredient does

Rump of beef
Forms the main body of the dish, becoming tender through long slow stewing.
White wine
Adds acidity and aroma that season the meat and its sauce.
Mushrooms
Contribute moisture and savory flavor to the stewing liquid.
Shallots
Add mild sweetness and aroma to the sauce as they cook down.
Lean bacon
Adds savory, smoky fat that flavors the meat and sauce.

The step that matters

Seal the edges of the pan with a strong paste. A tight seal traps steam and liquid inside the pan, so the beef stews in its own moisture rather than drying out during the long oven time.

Swap the onion
