Ingredients

Directions

Prepare the mutton

  1. Lard the leg of mutton with bacon and anchovies, then tie it with kitchen twine.

  2. Place the mutton in a pot just large enough to hold it, and add the water and stock.

Cook the broth

  1. Bring to a boil, then add the parsley, green onions, garlic, shallots, cloves, onions, carrot, and parsnip.

  2. Once the meat is cooked, strain the broth and skim off the fat.

  3. Reduce the broth over heat until it becomes a strong gravy.

Serve

  1. Pour the gravy over the mutton, using a few spoonfuls of stock or cullis to detach any remaining sauce in the pot.

What each ingredient does

Leg of mutton
Provides the main meat, which becomes tender through long gentle simmering in the liquid.
Bacon
Adds fat and savoury flavour that slowly melts into the meat and broth.
Anchovies
Add a deep savoury note that rounds out the gravy without tasting strongly of fish.
Onions
Release sweetness and aromatic depth into the broth as they simmer.
Carrot
Adds subtle sweetness and body to the broth as it cooks.
Parsnip
Adds earthy sweetness and body to the broth as it cooks.

The step that matters

Reducing the broth into gravy. Reducing concentrates flavour and thickens the liquid as water evaporates. Reducing too long or too hot can make it overly salty or sticky, so watch it closely.

Swap the clove
