What each ingredient does

Eggs
Bind the filling and set into tender omelet layers that hold the roll together.
Bread
Grated bread forms a crisp, golden coating when fried in butter.
Butter
Fat for frying that browns the coating and adds rich flavor.

The step that matters

Rolling and cutting the cooked omelets. Omelets must be fully set but still pliable; if overcooked they crack when rolled. Rolling tightly keeps the layers together so the pieces hold their shape through the coating and frying.

Swap the onion

How well each one fits the dish's main ingredients (egg, parsley, pepper, bread, butter):

  1. Shallotfits better
  2. Capsicumfits better
  3. Chivefits better
  4. Onionthe original

Fit is the average pairing score against egg, parsley, pepper, bread, butter. Candidates are from the same food group and used in at least 100 recipes.
