Ingredients

Directions

  1. Sift the flour and make a large well in the center.

  2. Add a pinch of salt dissolved in a little water, small pieces of butter, and the egg yolks into the well.

  3. Knead the flour with enough water to achieve a paste consistency similar to butter.

  4. Adjust the firmness of the paste based on the season: firmer in winter, softer in summer.

  5. Shape the paste into a large ball, flatten it quickly, and turn it in a spiral direction.

  6. Flatten the middle and prepare to roll out.
