Tourtes De LA Gelde — Jelly Tarts

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Line a tart dish with puff pastry, covering the bottom and sides.

  3. Bake the pastry until golden brown.

  4. Sprinkle fine sugar on the edge of the baked pastry.

  5. Glaze the sugar with a salamander or broiler until caramelized.

  6. Once cooled, fill the tart with your choice of jelly or jam.

  7. Serve as a side dish.
