Prunes Cle Damns Au Sec
Ingredients
Directions
Make a thin syrup by boiling water and sugar, then skim it.
Remove the stones from the damsons and add them to the syrup.
Boil the damsons once, then leave them in the syrup overnight.
Prepare another syrup with refined sugar and just enough water to dampen it; boil until it reaches a candy stage.
Remove the damsons from the first syrup and place them in the second syrup.
Simmer the damsons in the second syrup over low heat, then leave them overnight.
Place the damsons on a sieve and dry them in a stove or a nearly cold oven, turning them twice a day.
Once dry, layer the damsons in boxes with paper between each layer and store in a cool, dry place.
