What each ingredient does

Coffee
Provides the main flavour and body of the drink.
Isinglass
Acts as a fining agent that gathers fine grounds so they settle, leaving the coffee clearer.

The step that matters

Letting the coffee stand. The isinglass needs quiet time to bind fine grounds and draw them down. Moving or pouring the coffee during this rest stirs them back up, leaving it cloudy.
