Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean coarse beef
Provides the meat and body of the gravy, and browning it builds savoury flavour.
Boiling water
Forms the liquid base that the beef stews in and becomes the gravy.
Onions
Release sweetness and aroma into the liquid as they boil.
Thyme
Adds herbal aroma to the cooking liquid.

The step that matters

Browning the beef without burning it. Gentle heat lets the meat brown through the Maillard reaction, which builds savoury flavour. If the pan runs too hot, the surface scorches and turns bitter, and that taste carries into the gravy.

Swap the thyme

How well each one fits the dish's main ingredients (beef, onion, pepper):

  1. Garlicfits better
  2. Thymethe original
  3. Celeryfits about as well
  4. Parsleyfits about as well

Fit is the average pairing score against beef, onion, pepper. Candidates are from the same food group and used in at least 100 recipes.
