Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean coarse beef
Provides the meat that releases flavour and body into the gravy as it cooks.
Onions
Add sweetness and aroma as they soften and brown in the pan.
Butter
Adds fat that helps the meat brown and carries flavour.
Allspice
Adds a warm, aromatic spice note to the gravy.

The step that matters

Fry the meat until browned, not burnt. Browning builds the deep flavour of the gravy through the Maillard reaction. Burnt bits turn bitter and can taint the whole gravy, so gentle heat and close attention matter.

Swap the allspice

How well each one fits the dish's main ingredients (beef, onion, butter, pepper):

  1. Garlicfits better
  2. Parsleyfits better
  3. Thymefits better
  4. Allspicethe original

Fit is the average pairing score against beef, onion, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
