Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton neck
Gives the broth its meaty body and rich flavour as it simmers.
Turnips
Add mild sweetness and body to the broth as they cook.
Onion
Adds savoury depth and aroma to the broth.
Pearl barley
Thickens the broth slightly and adds a chewy texture.

The step that matters

Skimming the boiling neck. Boiling meat releases foam and impurities that rise to the surface. Skimming them off keeps the broth clear and clean-tasting rather than cloudy or greasy.
