What each ingredient does

Veal shoulder
Forms the main body of the roast, providing the meat that is cooked and served.
Butter
Adds fat and moisture during basting, helping the surface brown and stay juicy.
Flour
Dredged over the veal, it helps the surface brown and form a crust.
Eggs
Bind the bread crumb and suet stuffing so it holds together when roasted.
Bread crumbs
Absorb moisture and fat in the stuffing, giving it a softer, cohesive texture.
Marrow suet
Adds fat that melts into the stuffing, keeping it moist and rich.

The step that matters

Keep the veal at a distance from the fire at first. Starting far from the heat lets the thick meat and stuffing cook through gently before the surface browns. Placing it too close early can scorch the outside while the centre stays underdone.
