To Roast a Rabbit

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat your oven to 400°F (200°C).

  2. Prepare the rabbit by casing and trussing it.

  3. Roast the rabbit, basting it with good butter.

  4. Dredge the rabbit with a little flour to froth it when ready.

  5. Boil the liver with chopped parsley until cooked.

  6. Melt some butter and mix in half the liver and parsley; toss over heat.

  7. Pour the mixture into the serving dish and garnish with the remaining liver and parsley.

  8. Season the sauce with a little pepper, salt, and a grate of nutmeg.
