To Dress a Shoulder of Lamb

Ingredients

Directions

  1. Remove the shoulder from the fore-quarter of lamb, keeping as much meat as possible.

  2. Take out the blade and shoulder bone, leaving the shank end intact.

  3. Beat the egg and spread it on the area where the bone was removed.

  4. Mix the white pepper, salt, minced parsley, and bread crumbs together, then sprinkle over the lamb.

  5. Spread the force-meat over the lamb, then draw it up tightly with thread or twine to enclose the stuffing.
