Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a pudding pan, season veal with white pepper, coarse sea salt, grated nutmeg, and lemon.

  3. Turn the mixture out of the pan.

Top and bake

  1. Glaze the top with egg yolks and cover with bread crumbs mixed with grated lemon.

  2. Bake in the oven or crisp before the fire, basting with butter.

  3. Serve hot, garnished with lemon.

Bread crumbs
Form a crisp, golden crust on the top of the loaf.
Butter
Adds fat and richness, and helps the top brown as it is basted.
