Ingredients

Directions

Prepare

  1. Bone the leg of beef and remove the skin and fat.

  2. Place the beef in a stove pot with 4 gallons of soft water.

Simmer

  1. Add anchovies, mace, cloves, whole pepper, halved onions, thyme, marjoram, parsley, and the crust of the loaf.

  2. Cover tightly and cook over a constant fire for 7 to 8 hours.

  3. Stir well to separate the meat, then cover again and check if the soup will gelatinize after an hour.

  4. If it does, remove from heat and strain through a canvas bag into a clean pan.

What each ingredient does

Beef leg
Provides the meat and connective tissue that give the broth its body and gelatin.
Anchovies
Add a deep savoury flavour that rounds out the broth without tasting fishy.
Onions
Contribute sweetness and aromatic depth to the finished stock.

The step that matters

Checking for gelatinization. Connective tissue from the beef breaks down slowly into gelatin over long, gentle simmering. Stopping too early leaves a thin broth, while overcooking can make it cloudy, so the check after an hour matters.

Swap the mace

How well each one fits the dish's main ingredients (beef, clove, pepper, onion, thyme, marjoram, parsley):

  1. Winter savoryfits better
  2. Sagefits better
  3. Allspicefits better
  4. Macethe original

Fit is the average pairing score against beef, clove, pepper, onion, thyme, marjoram, parsley. Candidates are from the same food group and used in at least 100 recipes.
