Loin of Pork

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Cut a slit in the knuckle of the pork and fill it with chopped sage, onion, pepper, and coarse sea salt.

  3. Do not dust the pork with flour to prevent blistering.

Cook and serve

  1. Baste the pork with butter and cook it over a clear fire, not too intense.

  2. Twenty minutes before it's done, dust with flour and baste again.

  3. Serve with gravy, potatoes, and apple sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pork loin
Forms the main body of the dish, cooking into tender, juicy meat.
Butter
Basting fat that adds richness and helps the surface brown.
Flour
Dusted on late in cooking to help form a browned crust.
Sage
Adds an aromatic, herbal flavour to the stuffing inside the pork.

The step that matters

Dusting with flour late in cooking. Flour dusted on too early can burn or blister before the pork is cooked through. Adding it about twenty minutes before the end lets it form a crust while the meat finishes gently.

Swap the onion

How well each one fits the dish's main ingredients (pork, butter, sage, pepper, flour):

  1. Potatofits better
  2. Capsicumfits better
  3. Shallotfits better
  4. Onionthe original

Fit is the average pairing score against pork, butter, sage, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
