Ingredients

Directions

  1. Preheat your oven to a strong fire.

  2. Butter a piece of writing paper and fasten it to the back of the sirloin with small skewers.

  3. Once the meat is warm, dust it with flour and baste it with butter.

  4. A quarter of an hour before it's done, remove the paper, dust with more flour, and baste with butter again for a good crust.

  5. Garnish the dish with scraped horseradish and serve with potatoes, broccoli, French beans, cauliflower, or celery.
