What each ingredient does

Turbot
Is the main fish, browned in fat and then gently stewed in the wine sauce.
Flour
Coats the fish for browning and, mixed with butter, thickens the sauce.
Butter
Adds richness and, kneaded with flour, helps thicken the sauce as it melts.
White wine
Provides acidity and liquid that reduces during stewing to build the sauce's flavour.
Lemon
Adds bright acidity and aroma to the sauce.
Anchovy
Adds savoury depth to the sauce, melting into it and giving a salty, umami note.

The step that matters

Letting the fish stew until half the liquid is gone. Stewing concentrates the wine and anchovy into a flavourful sauce. Reducing too far leaves it dry and salty, while stopping too early leaves the sauce thin and watery.
