What each ingredient does

Beef
Forms the body of the hash, becoming tender as it stews in the sauce.
Veal stock or gravy
Provides the liquid base of the sauce and carries its savoury flavour.
Shallots or onions
Add sweetness and aromatic depth to the sauce when cooked gently in butter.
Fresh butter
Cooks the shallots or onions gently, adding richness to the sauce.
Pickles
Add acidity that cuts through the richness of the beef and sauce.

The step that matters

Cooking the shallots or onions over low heat. Cooking slowly over low heat softens them and draws out sweetness without browning or scorching in the butter. Rushing this step over high heat can leave them bitter or burnt, which would flavour the whole sauce.
