What each ingredient does

Egg yolks
Bind the stuffing and form a glossy coating on the fish skin.
Bread crumbs
Add a crisp, golden crust over the egg-coated skin as it roasts.
Butter
Adds moisture and richness and helps the outside brown during roasting.
Lemon peel
Adds fragrant citrus aroma that perfumes the stuffing and the fish.

The step that matters

Roasting the fish over a fire. Heat that is too fierce can scorch the bread crumb crust before the thick fish belly cooks through. Gentle, even heat and basting with butter help the flesh cook evenly while the coating browns.

Swap the nutmeg

How well each one fits the dish's main ingredients (lemon, pepper, egg, bread, butter, anchovy, sauce):

  1. Parsleyfits better
  2. Capersfits better
  3. Tarragonfits about as well
  4. Nutmegthe original
