Why it works: Anchovy and ketchup match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 479 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓
Gravy
Ingredients
Directions
Squeeze the juice of half a lemon into a saucepan.
Add the anchovy, morels, browning, ketchup, lemon-pickle, salt, and Cayenne pepper.
Thicken the mixture with butter and flour, then let it boil for 5-6 minutes.
Add your collops and shake them over the heat without boiling.
Once they have simmered, remove them and place them on a dish.
Strain the gravy and pour it hot over the collops.
Top with force-meat balls and curled bacon slices on skewers.
Add a few mushrooms and garnish with barberries and lemon.
