Chicken or Rabbit Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Build the pie

  1. Preheat the oven to 400°F (200°C).

  2. Cover the bottom of a dish with puff paste.

  3. Line the sides of the dish with a thin layer of forcemeat.

  4. Season the chicken pieces with salt and pepper.

  5. Place some seasoned chicken pieces in the dish.

  6. Add sweetbreads, truffles, morels, and artichoke bottoms on top.

  7. Sprinkle the chopped egg yolks over the mixture.

  8. Add a little water.

Cover and bake

  1. Cover the pie with more puff paste.

  2. Bake until golden brown.

Finish

  1. Pour in the rich gravy.
