Ingredients

Directions

Prepare the syrup

  1. Gather fresh strawberries, leaving their stalks on, and place them on a dish.

  2. Sift twice their weight of sugar over the strawberries.

  3. Bruise a few overripe strawberries and mix with an equal weight of sugar in a bowl.

  4. Cover the bowl and place it in a pot of boiling water until the juice thickens.

  5. Strain the juice through muslin into a preserving pan, boil, skim, and let cool.

Cook the strawberries

  1. Add the whole strawberries to the syrup and warm them gently without boiling.

  2. Remove from heat to cool, then repeat warming until the strawberries are clear.

Pot and serve

  1. Once cooled, transfer to pots or glasses and pour a little apple jelly over if storing long-term.

  2. Serve with thin cream, either iced or plain.

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Strawberries
Provide the fruit that is preserved whole and gives the dish its flavour and colour.
Double refined sugar
Draws out juice and, in the syrup, preserves the fruit and keeps it from spoiling.
Apple jelly
Adds natural pectin and a protective glaze on top when stored long-term.

The step that matters

Warming the strawberries without boiling. Boiling breaks down the fruit and turns the syrup cloudy, so the strawberries lose their shape. Gentle warming lets sugar slowly penetrate the fruit, keeping it whole and clear. Repeating the cycle of warming and cooling helps the sugar fully replace the water in the fruit.

Swap the apple

The recipe marks apple as optional. How well each one fits the dish's main ingredients (sugar, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better
  4. Applethe original

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
