What each ingredient does

Rice
Absorbs the stock as it cooks, becoming tender and forming the body of the pilaf.
Veal stock or broth
Supplies the cooking liquid that the rice absorbs, adding savory flavor throughout the grains.
Saffron
Adds a distinctive aroma and golden color to the rice and broth.

The step that matters

Pouring in the saffron infusion once the liquid boils. Saffron is delicate and its color and aroma are released best when steeped in hot broth, so it should be infused fully before being added to the pot.

Swap the saffron

How well each one fits the dish's main ingredients (rice, veal):

  1. Turmericfits about as well
  2. Saffronthe original
  3. Celeryfits less well
  4. Parsleyfits less well

Fit is the average pairing score against rice, veal. Candidates are from the same food group and used in at least 100 recipes.
