Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread
Forms the body of the soup as it softens and thickens with the broth.
Butter
Adds richness and a smooth, silky mouthfeel to the finished soup.
Water
Softens the bread and carries the flavours through the soup.

The step that matters

Add wine off the heat or after boiling. The record says not to boil the wine with the mixture. Boiling drives off much of the wine's aroma and can change its flavour, so it is best added without boiling.

Swap the mace

How well each one fits the dish's main ingredients (bread, butter, nutmeg, sugar):

  1. Cinnamonfits better
  2. Allspicefits better
  3. Clovefits better
  4. Macethe original

Fit is the average pairing score against bread, butter, nutmeg, sugar. Candidates are from the same food group and used in at least 100 recipes.
