Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Assemble

  1. Place a bed of lettuce in the bottom of a dish.

  2. Arrange the sliced snipes around the top of the lettuce, with one end towards the rim.

  3. Place the anchovy slices between the snipes.

  4. Mix the diced leg meat, lemon, minced egg yolks, parsley, and anchovies.

  5. Form the mixture into a mound in the center.

  6. Garnish with boiled button onions, placing the largest in the center.

  7. Cover with the remaining mixture.

Glaze and bake

  1. Smooth with beaten egg.

  2. Dredge with bread crumbs.

  3. Bake in a 400°F (200°C) oven until golden brown.

  4. Serve hot.

What each ingredient does

Snipes
Provide the main meat, forming the cooked body of the dish.
Anchovies
Add a salty, savoury depth that complements the meat and lemon.
Hard-boiled egg yolks
Bind the mixture and add a rich, creamy texture.
Lemon
Adds acidity that brightens the rich meat and yolks.
Bread crumbs
Form a crisp, golden crust during baking.
Beaten egg
Glazes the surface, helping it brown evenly and shine.

The step that matters

Baking until golden brown. The egg glaze and bread crumbs brown in the oven's dry heat. Too little time leaves the top pale, while too much dries the meat and yolk mixture. Watch the colour closely.

Swap the onion

How well each one fits the dish's main ingredients (lettuce, meat, lemon, egg, parsley, bread):

  1. Shallotfits better
  2. Spinachfits better
  3. Asparagusfits better
  4. Onionthe original

Fit is the average pairing score against lettuce, meat, lemon, egg, parsley, bread. Candidates are from the same food group and used in at least 100 recipes.
