Ingredients

Directions

Make the stock

  1. In a large pot, combine beef, hare, and cold water. Bring to a boil and skim thoroughly.

  2. Add salt, onions, celery, carrots, peppercorns, and cloves. Reduce heat and simmer gently for 3 hours or until hare is tender.

Finish the soup

  1. Remove hare joints, cut meat from bones, and mince finely.

  2. Soak the crumb of 2 rolls in a little boiling soup, then press dry in a cloth.

  3. Mix minced meat with soaked bread and strain the mixture into the soup.

  4. Pass the soup through a strainer, season with cayenne, and serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hare
Provides the main meat flavour and, once minced, body to the finished soup.
Beef
Adds gelatin and savoury depth to the stock as it simmers.
Rolls (in the method)
Soaked bread crumb thickens the soup and gives it a smoother body.
Celery
Contributes aromatic savoury flavour to the stock.
Carrots
Add sweetness and aromatic flavour to the stock.

The step that matters

Skim the stock thoroughly after it reaches a boil. Foam and impurities that rise at the start would cloud the broth and taste bitter, so removing them early keeps the soup clear and clean-flavoured.

Swap the clove

How well each one fits the dish's main ingredients (beef, onion, celery, carrot):

  1. Parsleyfits better
  2. Cuminfits better
  3. Thymefits better
  4. Clovethe original

Fit is the average pairing score against beef, onion, celery, carrot. Candidates are from the same food group and used in at least 100 recipes.
