Ingredients

Directions

Poach the fish

  1. Boil the soles in water for 2 minutes.

  2. Stew the fish gently for 6 to 10 minutes until the flesh separates from the bones.

Finish the sauce and serve

  1. Dish the fish and stir the lemon juice into the sauce.

  2. Pour the sauce over the soles and serve immediately.

  3. If desired, boil some lemon rind in the cream for flavor.

  4. If the sauce needs thickening, mix the arrow-root smoothly with a little milk and stir it in before adding the lemon juice.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Soles
The main fish, which turns tender and flakes away from the bones when gently cooked.
Cream
Adds richness and a smooth, silky body to the sauce.
Lemon juice
Adds acidity that brightens the rich cream and balances the fish.
Arrow-root
Starch that thickens the sauce when mixed smoothly with milk first.

The step that matters

Stew the fish gently. High heat tightens fish proteins, toughening the flesh and breaking it up. Gentle heat keeps the fish moist and tender until it separates easily from the bones.
