Why it works: Parsley and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Water Souchy

Ingredients

Directions

Prepare the broth

  1. Remove all bones from the fish and simmer them with the inferior portions in water for about 1 hour to make a strong broth.

  2. Strain the broth through a sieve and use it instead of water for the soucy.

Season and serve

  1. Carefully lift out the fish with a slotted spoon, along with the parsley roots.

  2. Pour the boiling liquid over the fish, leaving out the peppercorns.

  3. Add coarse sea salt, parsley, and a little cayenne pepper to the broth.

  4. Add the juice of ½ lemon to the stew before serving.

  5. Serve in a deep dish with slices of brown or white bread and butter on the side.
